Buffolo chicken is such a crowd pleaser, I am however not a wings girl. I prefer filet bites. This is why this recipe is for Buffalo chicken bites with chicken filet, though obviously it would work for wings as well.
Chicken is tricky as you want to make sure it turns out nice and tender. Nothing is worse than dry chicken. That’s why marinating chicken in buttermilk overnight is such a game changer for me. This neat little trick is the secret magic power of this recipe.

Have you ever wondered why Buffalo wings are called Buffalo wings? Me too! When I was young and stupid, so until yesterday that is, I believed it had something to do with the gentle furry giants that roam the praries a.k.a. buffalos. Turns out that never made any sense to begin with and is therefore false. They got their name thanks to a lady named Teressa Bellissimo, who came up with the recipe when her son came to visit her in her restaurant named Anchor Bar in Buffalo, New York.

Ingredients
- 2 chicken breasts
- 1,5 cups of buttermilk
- 1 teaspoon of paprika
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 1 egg
- ½ cup of flour
- 1 cup of bread crumbs
- Buffalo wing sauce (click here for my homemade recipe)
- 2 servings of Mareike’s chunky blue cheese dressing (or a store bought option of your choice)
How to prepare Buffalo chicken bites
My preparation of this dish already starts the day before. Cut the chicken filet into smaller, bite-sized pieces. Then place them in a bowl. Add the buttermilk, paprika, salt and pepper and mix it with a fork. Afterwards cover the chicken pieces with buttermilk mix and leave it in the fridge overnight. Thereby you ensure that the meat will be super juicy and extra tender.
The next day, drain the buttermilk from the bowland pour the flour over the chicken and toss it a bit. Make sure to cover all the bites with it.
Then crack an egg into a bowl and whisk it a bit. FIll a container with a lid with 1 cup of bread crumbs. Then pour the floured chicken bites into the bowl with the egg and toss it around a little. Then transfer the bites into the container with the bread crumbs, close the lid and shake it for a while. Thereby you will make sure the Buffalo chicken bites are all nicely coated.
Lay the filet on a baking tray and place it in the pre-heated oven. Bake the Buffalo chicken bites at 400 degrees Fahrenheit/200 degrees Celsius. After 10 minutes turn the chicken and bake it for another 10 minutes.
When you take the Buffalo chicken bitesout of the oven, place the bites in bowl and mix it with Buffalo sauce.
Serve the Buffalo chicken bites with chunky blue cheese dressing and enjoy!
