Ingredients for the “cheese” layer
- 3 ripe avocados
- Juice of ½ a fresh lemon
- 3 tablespoons (50 grams) of coconut oil
- 5 ounces (100 ml) of honey
- 1 tablespoon of dark chocolate flakes
Ingredients for the base
- 2 cups (200 grams) of ground hazelnuts
- 2 tablespoons of dark chocolate flakes
- 3 tablespoons (50 grams) of coconut oil
Start with the base by mixing all the ingredients and pouring it into a 10 in/26 cm cake form and compressing it with a cup or spatula so you create a compact cake base. For the cheesecake filling, place all the ingredients in a food processor and let the device do its magic for about 3 to 5 minutes. Then, pour it onto the cake base and you’re already done. Let the cake chill in the fridge for about 3 hours before serving to allow the filling to solidify.
