Moreover, you get to choose the sweetness level by the ripeness of the banana (more ripe equals sweeter).

- 1 medium-sized banana
- 2 eggs
- 1 tablespoon of vegetable oil (for the baking in the pan)
Mash the banana with a fork in a bowl and mix it with the eggs. Drizzle the oil into a hot pan and scoop 3 tablespoons of the mix per pancake. I recommend using vegetable oil instead of butter, simply because it makes the edges turn out crispy.
