Banana Pancakes: Golden like the morning sun

Pancakes are amazing feel good food. Your day can not go wrong from here, of you start with them. They are even more amazing when you turn them into a super simple and healthier version with banana. Since you can prepare them in less than 10 minutes, they are even perfectly suitable for a busy weekday breakfast. Moreover, you get to choose the sweetness level by the ripeness of the banana (more ripe equals sweeter).

Ingredients

  • 1 medium-sized banana
  • 2 eggs
  • 1 tablespoon of vegetable oil (for the baking in the pan)

Mash the banana with a fork in a bowl and mix it with the eggs. Drizzle the oil into a hot pan and scoop 3 tablespoons of the mix per pancake. I recommend using vegetable oil instead of butter, simply because it makes the edges turn out crispy.
