Sweet potato beef stir fry


One of the standard food myths is the idea that you can either have soul food or make “the right choice” and opt for something healthy. Now who is to say you can’t have it both? Exactly! This simple stir fry is out there to proof that “yes, you can”. Like a lot of great soul food it is pretty simple, but the individual ingredients form a quite unique taste combination. I love this as a lunch or dinner after a workout as it satisfies your body’s craving for hearty and rich food, without being rich in calories. That’s why I like to consider this smart soul food.

Sweet potato beef stir fry recipe

  • 2 cups (250 grams) diced up sweet potato
  • ½ lbs (225 grams) of ground beef
  • 1 tablespoon of olive oil
  • 1 diced up garlic clove
  • 2 tablespoons (50 grams) of ricotta (if you have no ricotta use cream cheese)
  • ½ cup (125 ml) of milk
  • 1 tablespoon of mustard
  • 1 teaspoon of red pepper
  • ¼ teaspoon of thyme
  • 2 tablespoons of chopped fresh cilantro/coriander
  • Salt and pepper to taste

Cut the sweet potato into small to medium-sized dices and cook them for 10 minutes in a pot with water. While the sweet potatoes are cooking, bring a pan to medium heat, add the olive oil and the garlic, then add the ground beef and cook it until evenly done. Add the ricotta, milk and mustard and stir it until it’s nicely blended in. Now let the red pepper, thyme, salt and pepper join the rest. Add the sweet potatoes to the pan and let everything simmer on low heat, while you chop the cilantro. Take the pan of the stove and then drizzle the cilantro on top.
