Crushed avocado bread



Ever thought the grass is greener on the other side? Only if the other side has avocado bread waiting for you! This breakfast is a powerhouse of nutrition. Avocado is loaded with good fat. Thanks to the lemon, this dish you gives both vitamin C and a fresh wake-up kick. If you opt to top it off with scrambled egg, this avocado bread will torpedo you with a protein load as well. Plus, this is a really hassle-free, easy to prepare.

  • 2 slices of wholewheat bread
  • ½ an avocado
  • 1 teaspoon of freshly-squeezed lemon juice
  • Pinch of chili
  • Pinch of salt
  • Freshly ground pepper
  • Optional protein kick: 1 egg, a pinch of oregano and a teaspoon of milk

Thankfully, the preparation of this is as simple as it gets, which is good since no one has the time to spend hours making breakfast, certainly not on a typical weekday anyway. So here we go: mash the avocado in a bowl with the lemon juice, chili (flakes or powder, whatever floats your boat) and salt. I recommend using a fork for this – quick, easy and hassle-free. Toast the bread for 2-3 minutes or till it’s however browned you like it. Spread the avocado mix on each slice of toast and add freshly-ground pepper on top.

If you think, “well this is nice, but I need more protein”, crack an egg into a cup, add a bit of dried oregano (as this is great to get your digestive system up to speed in the morning) and a teaspoon of milk. Whisk it all together and scramble it in a pan. Drizzle the egg on top of your toasted avocado bread and voilà, you just created yourself a breakfast for champions!
