Super creamy sesame peanut noodles

Have you ever seen a peanut flower? I only just now realized how pretty they look. Check them out. Besides being tasty, they can actually also prevent soil erosion in areas that are prone to it. Who knew? I certainly didn’t.

Peanut butter is one of those things that you either love or hate. I rarely hear of anyone who really has no opinion about it. It also seems to be one of those very American things. Like you would not find many people in Europe who would ever have peanut butter on a sandwich, let alone a peanut butter and jelly one. BTW have you tried my peanut butter and jelly smoothie? If not, you should, it’s sooo delicious.

Nonetheless, peanuts are amazing legumes, as they are rich in protein and therefore a great way to have a well-rounded, healthy vegetarian meal. This creamy sesame peanut noodles bowl is all of that and can be prepared quickly and without much hassle. It’s also suitable for meal prep.

  • 8 ounces of short egg noodle spaghetti
  • 1 red bell pepper
  • 4 spring onions
  • 2 tablespoons of toasted sesame oil
  • 2 tablespoons of lime juice
  • 1 tablespoon of brown sugar
  • 2 garlic cloves
  • ½ a teaspoon of chili powder
  • 3 tablespoons of soy sauce
  • 2 tablespoons of smooth peanut butter
  • ¼ cup of water
  • ½ a cup of chopped peanuts
  • ¼ cup of chopped cilantro/coriander

How to prepare sesame peanut noodles

When dinnertime rolls around, bring a pot of water to the boil and cook the noodles according to the directions on the packaging. When they’re done, set them aside.

While the noodles cook, cut the bell pepper and spring onions into slices. Also chop the garlic clove.

To a pan add the two tablespoons of sesame oil and then the garlic, chili powder, lime juice, brown sugar, peanut butter, water, and soy sauce and blend everything well while cooking it at a medium heat.

Toss in the bell pepper and spring onions, together with the noodles, and cook it for 5 minutes. If you feel the sauce is getting too thick, add a few tablespoons of water until it reaches the desired consistency.

After cooking, add the peanuts and cilantro as toppings to your creamy sesame peanut noodles.
