Tender oven-baked garlic lemon chicken – Fork yeah!

Nothing screams summer quite like lemons. While you can obviously also integrate them into a wintery lemon christmas cookie, barely anything compares to lemon flavored dishes for the warm months of the year.

Garlic lemon chicken is super quick to prepare and will only take 15 minutes of your time before your oven takes over to take care of the rest. It’s a vitamin C injection on a fork. Lemons being the bright little yellow fellows that they are are full of so many healthy nutrients, it’s mind baffling.

As far as I know there is two main modes of cooking lemon chicken: in a skillet or in the oven. I generally prefer to prepare chicken in the oven as it tends to lead to a more tender outcome. Besides it’s also more hands off. So that is a clear winner for me and therefore also the methode used in this recipe.

By the way, the lemon garlic butter used for the chicken, also works just as nice as a spread to give your garlic bread a zesty twist. Also try it with oven roasted veggies and potatos. So the chicken is essentially just the co-star of this summary dish, if you will.

Ingredients for garlic lemon chicken

  • 2 chicken breasts
  • 2 tablespoons of butter
  • 2 minced garlic cloves
  • 1/4 cup of fresh lemon juice/juice of one squeezed lemon
  • 1/2 fresh lemon
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground black pepper

How to prepare garlic lemon chicken

Step 1: Start your garlic lemon chicken by mixing the butter, garlic, lemon juice, salt and pepper in a bowl until you have a smooth blend.

Step 2: Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

Step 3: Coat the chicken breast in the lemon butter blend and place them in a casserole dish. Make sure the dish is not too big, but fits the chicken breast so the meat does not overlap, but that there is also not too excess space.

Step 4: Cut the fresh lemon in slices and place the slices on top of the chicken breast.

Step 5: Let the garlic lemon chicken cook in the oven for 30 minutes. Set your timer to 15 minutes and turn the chicken to the other side after that.
