Halloween eye candy – Caramel brownie creme

Halloween is right at our doorstep, but don’t be scared that you might accidentily miss the best treats or the scariest monsters. To ensure, you got all sweet sugar energy boost you need for extensive trick or treating around the neighborhood, this caramel brownie creme hits the spot.

Ingredients

Brownies recipe

Note: this is the ingredients list for a full batch of brownies. You will however only need one slice of brownie per glass of caramel brownie creme serving.

  • 1/2 cup (125 grams) of melted butter
  • 1 tablespoon of vegetable oil
  • 2/3 cup (135 grams) of white sugar
  • 1/2 cup (100 grams) of brown sugar
  • 2 eggs
  • 1/2 cup of cacao poweder
  • 1/2 cup of flour
  • 1/4 teaspoon of salt

Caramel creme recipe

  • 1 1/3 cups (300 ml) of whole milk
  • 1 tablespoon of starch
  • 1 egg yolk
  • 1/4 cup (50 grams) of sugar
  • 1/2 teaspoon of vanilla aroma
  • 1/4 teaspoon of cinnamon
  • 1/2 teaspoon of lemon juice
  • A pinch of salt

Decoration: Four marshmellows, a bit of chocolate sauce and two glasses

How to prepare caramel brownie creme

Step 1 – Brownies

Good news, brownies are not rocked science, so this part is pretty quick and easy. Mix all the ingredients for the brownies in a large bowl and then pour the dough into a buttered and floured baking dish. Then bake it at 350 degrees Fahrenheit (175 degrees Celsius) in the pre-heated oven for 25 minutes. Afterwards, let the brownie cool down in the fridge.

Step 2 – Caramel creme

While the brownies are baking in the oven, prepare the caramel creme. Add 4 tablespoons of the milk into a cup and mix it with the starch and egg yolk. Heat up the remainder of the milk in a pot.

Take a second pot and melt the sugar in it. Let it caramelized until it’s slightly browned. While doing so, make sure you continously stir to make sure the sugar is not sticking to the buttom of the pot or burning. Also have the pot at medium heat. Slow and stready wins the race here. Nothing tastes worse than a dessert with burned sugar flavor. Slowly add the hot milk and let it simmer until the caramel is completely dissolved.

Remove the caramel milk from the stove and mix in the egg milk, vanilla and cinnamon. Place the creme on the stove again and let it simmer a bit while stirring until it thickened.

As a last step, add the lemon juice and a pinch of salt.

Fill the creme in a bowl and let it chill in the fridge to let it cool down until it’s time to assemble the Halloween caramel brownie creme.

Step 3: Assembling the caramel brownie creme

Add 2-3 generous tablespoons of the caramel creme to a glass. Then take a slice of the freshly baked brownies and crush it up a little. Place the crushed bits on top of the creme. Next, apply 2-3 tablespoons of the caramel creme.

As for the eyes. Place a bit of chocolate sauce in the center of two marshmellows and let position them on top of the creme.

You can either serce the caramel brownie creme right away or keep it in the fridge for a while.
