Anyone could do a red velvet cake, but how about broadening your color pallette by preparing blue velvet cupcakes. The beautiful thing about cupcakes is that they are pretty quickly prepared. They are usually my go to, if we need a spontaneous sweet treat.

Recipe for the blue velvet cupcake dough

  • 1 cup (200 grams) sugar
  • ½ cup (115 grams) unsalted butter (room temperature)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tablespoon white vinegar
  • 1 ¼ cup (190 grams) flour
  • ½ cup (120 ml) milk
  • ¼ cup (25 grams) unsweetened cocoa powder
  • 1 tablespoons of blue food coloring gel
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder

Recipe for the blue vanilla icing

  • 8 ounces (200 grams) cream cheese
  • ½ cup (115 grams) unsalted butter (room temperature)
  • 1 tsp vanilla extract
  • 3 cups (390 grams) powdered sugar
  • ½ teaspoon of blue food coloring gel
  • Optional topping: smarties

How to prepare blue velvet cupcakes

Start by preheating the oven to 350 degrees F (180 degrees C) and prepare the cupcake mold with butter or baking spray.

Mix the sugar and butter until creamy. Then add the eggs, vanilla and vinegar. After all is well combined, whisk the flour, salt, baking soda, baking powder and cacao in on low mixer setting. When all ingredients formed a smooth dough, add the food coloring gel. I prefer using gel over liquid food coloring as it usually results in a more intense color effect and doesn’t change the consistency of the dough.

Distribute the batter between 12 cupcake molds and bake the mini cakes for 25 minutes until done.

While the blue velvet cupcakes bake in the oven, prepare the icing. Mix the cream cheese, butter and vanilla in a large bowl. Slowly drizzle in the powdered sugar while beating the frosting.

Place the frosting in the fridge until the blue velvet cupcakes have fully cooled down. Then apply the frosting and add a topping, if you like.
