This is one of those moments when food turns into a magical delight. Cashew sauce is so incredibly smooth and creamy, that you just can’t get enough of it. Or at least I most certainly can’t. Cashew sauce works amazing with oven roasted veggies, steak, chicken or as a dip for raw vegetables.
Besides, cashews are super healthy. They are rich in fiber and a great plant based protein source. So definitely a great choice for vegans to get their protein intake. Especially in the colder month of the year, those zinc boasting little fellas give your immune system a great kick.
This cashew sauce is super simple to prepare and you can make a bunch of it ahead a.k.a. it’s meal prep friendly. Moreover, it is the perfect partner in crime for my lemon chicken.

Ingredients for cashew sauce
- 1 cup of cashew nuts (5.3 ounces, 150 grams)
- 1-2 garlic cloves
- Salt and pepper to taste
How to prepare cashew sauce
Pour the cashews in a bowl and add 1 cup of water. Peel the garlic cloves and cut them into larger chunks, then add them to the bowl. Let it all rest for 3 hours to soak.
After the 3 hours have passed, puree the nuts and garlic with a blender. Add salt and pepper to taste.
Now the choice is yours: to heat or not to heat. This cashew sauce works perfectly wonderful, if you enjoy it cold. Though heating it up in a pot for a few minutes, is just as good of a solution. At the end, it comes down to your personal preference.
